Potato Pancakes

Ingredients:
1)  
1 medium Potato
2)   1 Egg Yolk

2)  
Pinch of Salt
3)  
Pinch of Pepper
4)  
Pinch of Parsley
5)  
1 tsp of Cornstarch

 

Preparation:
1)  
Shred potato.
2)  
Mix in remaining ingredients.
3)  
Form pancakes.
4)  
Place into hot skillet and fry on both sides for 2 to 3 minutes until golden brown and crispy.
5)   Place onto paper towels to drain excess fat.
